No one. AHC is a fluff title, not a required position to fill.

We still have one Assistant Head Coach on staff currently. Cable was one of two on staff

Yeah, typically it's only used to protect a coach against poaching. You can't steal an AHC unless you're making him a Head coach.

Title and a bit more pay is usually a good way to entice a candidate. i.e. if we are competing with another team for someone, it could be the deal maker.
