You can list more than one by position. Here's mines:

QB: Drew Brees
TE: Antonio Gates
RB: All day, AP
WR: Dez Bryant or Larry Fitzgerald
CB: Desmond Trufant or Champ Bailey
Safety: Polamalu
OL: Logan Mankins
LB: Patrick Willis

Fitzgerald.
Kuechly.
AP.

A different list for me is players who fascinate me. I don't like or hate, but have to watch.
Romo.
Rodgers.
Bryant.
Rex Ryan. (not a player, but have to watch)
Brady.
Watt.
Cutler. And Marshall.
Kaepernick. And his coach.
Ngata.

AP - I've always had to stop and tune in when I see him on the TV.

Brandon Marshall/Megatron - Sometimes you see guys that are just clearly head and shoulders better than everyone they are playing against. It's fun to watch. I'd throw AJ Green in here if Andy Dalton wasn't so awful as to make watching Green's games difficult.

JJ Watt - I'd say he is probably the most talented individual player in the league. I have to tune into his games just to see what ridiculous play he is going to make next. I'm particularly excited to see if Clowney lives up to his hype, what Watt will be able to do.

Robert Quinn. Loved him at UNC, and wish he was on our DL.

Larry Fitzgerald for being a class act.

Peyton Manning and Johnny Manziel. Manning is the NFL's version of Superman. Manziel is the NFL's Batman, if Batman pulled off the mask to reveal Jack Nicholson's Joker.

Kaepernick is fascinating to watch. Kuechly is electric on the field but does not have a stand out personality. Bowman is just really good.

I agree on Kaeperchoke, but for me it is more like watching a young Michael Vick who throws more. Fantastic on the move and built a little better for it. Strong arm, but subject to the big mistake at times.

I do have an appreciation for the Stafford/Megatron combination, if that guy could dial the INTs back he could be extremely valuable.

Well...too easy to answer this with Niner players since I'm a Niner fan, so I'll exclude Niners.

AP
Watt (that dude is Beast from the X-Men)
Lynch (when he's not playing SF)
Megatron
Brees
Rodgers

Edit: This is what I think of every time I see JJ Watt.

R. Wilson - the most evasive qb I've ever seen.
Watt - special player.
Ndamukong Suh - mean special.
Aldon Smith - drunk special.
E. Thomas - the Michael Jordan db of the NFL.
Sherman - douche special, but still really special.

Yeah.. JJ Watt is a freak player. That dude is a machine. When Lynch busted out one of his beast runs up the sidelines in Houston, after breaking a collection of tackles JJ was in pursuit in the end way downfield. That huge monster never quits.

I wish we had Watt. He seems like the kind of insanely fierce competitor that would be right at home with Pete Carroll as well, to be honest.

ill reply in terms of non-niners.. :p
These are my favorite to WATCH, not because they are good, or they suck. but they are very entertaining!

QB: Brees, Russell Wilson, Romo
RB: Lynch, McCoy
WR: Dez, Calvin, Desean Jackson

DB:Chancellor, Polamalu, Mathieu, Charles Woodson, Berry
DL: Chris Long, JJ Watt
LB: Von Miller

PR/KR: Patrick Peterson (sadly hes not doing this anymore)

But I'd have to say the most exciting player on offense right now is hands down LeSean McCoy. And it isnt even close. The guy is the closest player to ever resemble Barry Sanders
