I actually prefer Texas style myself and St. Louis style ribs I'm not big on burnt ends either. But I'm not a a Kansas City native either.

Burnt ends are Kansas City's thing ribs are a St. Louis thing.
I thought the burnt ends were cut off the ribs. I gotta call to see if they have any and just assumed that though. It's all I've ever gotten from the local kc place.

Burnt ends are from the brisket point, the fatty part. They have a cracklin sort of texture, but meatier. Used to be a secret delicacy that barbecue joints reserved for special customers who knew about them, and requested them. They've become well known and popular now. Quality has suffered with popularity. Kind of a shame, but at least more people get to enjoy them now.
